    Fish intended for raw consumption needs to not just be previously frozen, but previously frozen at a certain temperature for a certain length of time.

    For the raw consumption of fish in the U.S.:

    “Fish intended for raw consumption must be frozen at specific temperatures and times to destroy parasites that may be present. Freezing fish below -4°F (-20°C) for a minimum of 7 days or below -31°F (-35°C) for 15 hours effectively kills parasites, such as Anisakis, which are commonly found in certain fish species.”

    “Here are 15 common types of fish used for sushi and three parasites that can be found in each:

    1. Tuna:

    Parasites: Anisakis simplex, Contracaecum spp., Pseudoterranova spp.

    2. Salmon:

    Parasites: Anisakis simplex, Diphyllobothrium spp., Nanophyetus spp.

  2. My guess is that people who eat sushi on a regular basis probably have some type of parasite(s) living in them.

  3. I am a long time sushi chef. This guy intentionally find(or make) a terrible fish to get attention from the people. I have never got such a terrible fish in my whole chef life. Don’t need to be afraid of eating sushi at all.

    Sooo i bought some farm raised Costco salmon- I read that it’s ok to eat. This is making me re think this
