What is the name of this type of nigiri/how is the fish prepared (I believe it was cooked medium fatty tuna)? Almost was similar to steak but tasted better than almost any steak I’ve ever had

  1. *Aburi* 炙り (seared) neta is always going to be hard to precisely identify from just an image, but if it is medium fatty tuna, it would be called Aburi Chū-toro or simply Aburi Toro.

    There are different ways to sear the neta:

    * Blow torch
    * A broiler
    * [Charcoal held over the neta](https://imgur.com/a/Qf1qArk)
    * [The neta directly in contact with a piece of charcoal](https://imgur.com/a/ggSFjWu)
    * [On a stove with direct flames](https://imgur.com/a/z73j0Ye)

    In this case, because of the lack of bits of char, I would say it was done by holding the charcoal over the neta.
