We sometimes make salmon mango rolls. Fantastic combo. Also Unagi with green apple is great.
Pretty sure there was an episode of kitchen nightmares or hotel hell that featured a fruited sushi dish. I believe the chef was combining salmon and strawberries. Gordon hated it.
I’ve found good quality tuna and mango go very well together as maki.
Small slices of rindless lemon also be quite good with scallop, yellow tail and sea bass nigiri.
I tried it, liked it. Then my Japanese husband basically said I was an idiot with no taste buds…
About 8 years ago an ex took me to a sushi restaurant in New Orleans, I can’t recall the name. My roll had strawberries in it and all I can remember is the taste profile was absolutely amazing and the roll was very thick, fatter than the cardboard tube of a paper towel roll.
