Until Tokugawa Ieyasu established his government in Edo, Kyoto had been the center of Japan for 1600 years.
Kyoto does not have a port, so Osaka became the logistic hub and had the largest food market in Japan.
In fact, the food in Osaka is the best. All the long-established famous ryōtei restaurants started their businesses in Osaka.
Oh 100%. Everywhere in Japan has its own culinary specialty, but Osaka is positioned so perfectly- it’s an enormous port city with a rich history surrounded by other culturally and economically important cities. Friendly people, fresh ingredients, rich history, diverse culture bringing inspiration and innovation from all over. Sure, Tokyo has a lot of nice and fancy restaurants, but Osaka really captures the *essence* of what makes food great. I can find good food anywhere in this country, but whenever I’ve gone to Osaka I just can’t help myself.
