I learned how to roll sushi with this roll

  1. It’s no secret that sushi chefs won’t let apprentices go anywhere near the sushi counter until they’ve mastered the art of shitashori (ingredient prep). Kappa maki is a type of hosomaki (thin roll) made with cucumber sushi rice and nori. It may sound simple, but to make it well, you need to be able to select the right ingredients, understand how to prepare them, as well as the technique to roll them together. It’s a cheap roll to make so it’s good practice, and it’s also a delicious, refreshing roll in summer.
    To make it well, you need to 1) make good sushi rice, 2) select and prepare the cucumbers properly, 3) select high-quality nori, 4) roll it properly 5) cut it properly. None of the steps are hard, but it does take a little practice.
