Any travel pointers are welcomed as I’m also trying to plan routes to take too. All accommodation has been booked so I’m not planning on changing that aspect.

Back to Ryokan for dinner

That first day in Tokyo is ambitious, especially if you will have any jet lag. Maybe move one or two of the first day activities to the Tokyo days at the end?
Looks pretty good. First day is rather ambitious on its own and more so given potential jetlag. 8th also ambitious. Okonomiyaki is a dish, not sure why you listed it like it’s an activity?
