Easy and healthy vegan recipes?

I just need it for myself. I want to make vegan food but the recipes on the internet are difficult for me, or the ingredients are not available here.

Please share high protein recipes/tips to add more protein as well, thanks!

  2. Tofu, mushroom, vegetables stir fry is basically an unlimited recipe. Just change up the type of mushroom/tofu softness/type of vegetables/type of sauce you use.

  3. I made these the other day, they were delicious and extremely cheap. I guess don’t add the honey if you count it as not vegan.

    If Japanese curry roux is vegan, that’s delicious with some vegis! I make it pretty much weekly. Potato, carrot and onion is great but sweet potato and pumpkin is really nice for winter too.

    Mashed sweet potato is amazing. I guess you could put it with.. something?

    Gyomu sells hummus, so hummus and carrot, red peppers or cucumber sticks is delicious.

  5. Curry is my go-to when I want to make something vegan.

    I like it with eggplant, but you can use all kinds of vegetables. I use diced up onion, carrots, and peppers. Cook them all up in some oil (with salt if your curry seasoning doesn’t have it), then add a bunch of seasoning. Store bought curry powder works fine.

    After they’re cooked, I add a can each of diced tomatoes, chickpeas, and coconut milk and let it cook for a bit. I usually eat it with white rice.

  6. If you google vegan recipes in Japanese you’ll get recipes that use ingredients that can be found in Japan.

  7. There’s a lady called Lisa Kitahara/Okonomikitchen who makes realy yummy veggie Japanese food, but those might be too difficult. Maybe the lazy student vegan cookbook?

  8. Stir fries are easy and you can make them a million different ways. Just throw in some frozen veggies, chopped up fried tofu, and any seasonings you like. Harissa paste (found at Kaldi) is a nice choice.

    Also, the curry roux they sell at Daiso is vegan and delicious. Another easy option are the canned Thai curries they sell at Gyomu. Just add veggies and tofu, and some coconut milk if you like. Enjoy!

  9. im not vegan but mother is, and here are the recipes of my favorite dishes by her

    vegan satay

    soya chunks soaked in a mix of sweet soy sauce (kecap manis) and a tbsp of peanut butter and 1tsp of coriander powder, skewered then grilled on top of an open flame, season with bit of salt

    vegan wrapped skewers

    chinese dried tofu 湯葉 marinated with salt, turmeric and onion powder, wrap on stalks of lemongrass and also grill on open flame

    dal curry and fried gluten is also really good

    all loaded with protein 👍

  10. Meal planning and menu stuff is actually a really good use case for generative AIs. Prompts like “please provide a vegan dinner recipe, high in protein using ingredients commonly available in Japan” go a long way, and can save you a lot of annoying searching and filtering.

    I use it all the time. Have some ingredient you’re craving? Add “Please include broccoli” or whatever. Works great.
