I recently learned how to properly prepare Japanese rice and wanted to share it here. This method can be done with or without a rice cooker.
1. Purchase short grain white rice (pictured).
2. Measure out ~100g dry rice per person and put in a larger container.
3. Rinse: Fill the container with cold water and discard water immediately.
4. Wash the rice: with only a little water in the container, use your hands to stir the rice for 10 seconds so it rubs all together. Rinse and repeat this step 2 more times.
5. Put the rice in your pot or rice cooker. Add 125mL of water for every 100g of rice. Let soak for 20-30 minutes.
6. Put the lid on and do not take it off until the final step. Turn on your rice cooker, or stove to medium heat and bring to a boil. Let simmer on low heat until all water is evaporated, about 10-20 minutes depending on how much rice you have cooked.
7. When rice cooker is finished or pot no longer has water, let sit for 10 minutes before removing the lid.
8. Fluff and serve!
