Long French Fries

Hello guys, I am from Nepal. Here I am seeking your help. I’d seen lots of video street vendors selling these long french fries on youtube. so my question is what’s its main ingredient? after doing so much research they said potato powder or instant mashed potato powder. and what does it taste like? I am planning to open one of these here in my hometown. That’s why I am here. Any help would be much appreciated. thank you.

  1. You are planning to open a food stall for a niche item , never having to ever taste the product or even made it before?

  2. I found a video on YouTube where a Japanese guy talks about how he makes long potato fries for festivals (probably the type you are talking about):

I found the same potato powder (Ras) he uses in the video above being sold on Rakuten here:

The above link also contains the preparation instructions, so you can use Google Translate to read if it necessary.

    Ingredients: 乾燥ポテト、ポテト澱粉、卵白粉、食塩、増粘多糖類、乳化剤、安定剤(ピロリン酸Na)、保存料(亜硫酸Na)

Ingredients Translation: Dried potato, potato starch, egg white powder, table salt, polysaccharide thickener, emulsifier, stabilizer (tetrasodium pyrophosphate), preservative (sodium sulfite)

By the way, the above (Ras) looks like it is originally from the Netherlands:

Unless you mean this other type of long potato street food, but this one looks like it’s just made from whole potatoes which are cut in a special way:

  3. Search for potato flakes. How they make it into long fries, I don’t know. A video would help.

  4. In my younger years, I worked at a national fast food chain in the US. I cooked the fries. We loaded the machine with dehydrated potato pellets which were reconstituted in the machine and spit out into the vats of oil to cook. That was quite a few decades ago, so I don’t know what the process is like anymore. However, it would seem rather simple to tweak the machine into forming longer french fries when they are “grown” from the pellets.

But I’m not so sure longer is better when it comes to french fries. At least, I cannot imagine them being easy to handle or eat.

I do love your idea of flavoring the fries. That’s what I would work on.

btw, the fries at the fast food place tasted like french fries. You really wouldn’t know that they came from potato pellets.
