Hey guys I’m spending 2 weeks in Tokyo during holidays what should I try before leaving? So far I tried sushi , ramen , takoyaki and yakiniku restaurants, I’m currently staying in Minato district but I’m willing to move around Tokyo freely

If they still have Mellon Fanta with cream at McDonald’s (weird on various levels)
Be brave and enjoy the unique food experience, try literally everything.
I’m going back next month. Besides a ton of ramen, otoro, and wagyu, I’m also planning on eating: nikuzushi, bonjiri, chicken nanban, chicken karaage, nikuzushi, tempura, nikuzushi, famichiki, croquettes, and nikuzushi.
Weird thing to say but would also recommend Chinese restaurants. But specifically a genre of restaurants people call 町中華 (machi chuuka). Translates to “city chinese” but really means “local chinese”. Usually would have the Japanified version of classics like fried rice and gyoza dumplings and the basic soy-sauce based ramen. These places are really good in terms of cost performance. Also, the oilier and the dirtier the place is, the better.
Kushikatsu
Visit a Shabu Shabu restaurant.
