Are you at Omakasi By Korami in NYC? Went to that place a ton, this looks pretty familiar.
It’s the sushi monaka from a restaurant called Sugidama—same company as Sushiro

There’s a manufacturer/distributer in the US, but I haven’t had much luck in getting them in smaller quantities.
You can import them from Japan though. They’re shells for Monaka. Usually used more for sweets in Japan.

However, they do absorb moisture and go stale fast if they’re not shipped or stored properly.
