Yuzu koshou – like a citrus peppery paste that goes amazing for gyoza, but also other foods
Samjang(green tub) – Korean bbq soybean paste for bbq. Goes great with meat and fresh veggies and give it a savory slightly spicy kick
I would either do goma shabu or a chili crisp (油辣椒) from gyomu super. Or you can mix them together for an even better time.
I look for regional ponzu and take a chance and buy random looking ones from various prefectures. Some are amazing, some or not so amazing. Be adventurous.
Ponzu + chili crisp (Lao gan ma) + sesame oil is great for many things.
If you want to fancy it up a little, fresh minced garlic and green onion take it up a notch.
The pesto alla genovese from gyoumu. I like mixing it with a little more lime then put it on top of my fried fish.
For chilled tofu, I recommend a dash of “mentsuyu” (noodle soup base for somen) topped with sliced green onions, some mentaiko (spicy cod roe) and and sprinkle some tempura bits on top for some crunch factor.

If you spicy, then the Peri-Peri hot sauce from Kaldi slaps. Perfect for chicken.
