  1. Your mise is so quaint! I feel like I have to up-end my whole pantry when I make sushi (and the end result still looks nowhere near as good as yours)

  2. Just trying to be constructive here but it looks like way too much rice and looks pressed too firmly. You shouldn’t pass a rice section twice as you’ve done here. Texture is likely not delicate but dense and chewy. Some of the avocados look in poor shape. Keep at it and continue improving your technique. If you insist on sprinkling scallion then cut them on a bias so they actually can sit on top without falling.

  3. Okay, so I’m allergic to salmon, but damn if this doesn’t look delicious enough to risk it.
