This is the first time i post something here.
I was in ho chi minh city in a food chain called hokkaido, there the sushis are almost as good as in japan tbh.
They had these 2 sushis rolls called hotate rolls and grilled salmon roll. Anyone got a recipe for these?+sauce included?
Wether i ask chatgpt, type in japanese on google or check sushi books i find nothing.

Hotate is simply the Japanese word for scallop.
These are signature rolls from a restaurant. There is no standard recipe for these.
I might be able to tell you what these rolls contain, but the provided picture is quite low quality.
Grilled salmon roll: california roll plus torched seared salmon on top and either Bonito flakes or tempura crunch on top. Eel sauce
Tobiko ebi roll: shrimp tempura, avocado on top, salmon roe mix on top. No sauce
Grilled hotate roll: california roll with seared Scallop on top with again either Bonito flakes or tempura on top. Eel sauce.
Kani crunch: looks like a soft shell crab roll with tempura flakes on top. (Spicy mayo sauce?)
Unagi spicy roll is hard to see: but definitely unagi eel inside with maybe salmon and salmon roe on top? Lemon peel on top as a garnish too? No sauce
