10 day September trip help and recommendations!!!

Hi everyone! Unlike most of the posts here which have already fixed their itinerary, this one is more about any suggestions around our itinerary and what to do. Context –

We are two friends (25M) visiting Japan. We land in Tokyo on 15th early morning (6:45am) and very honestly we don’t ANYTHING planned lol. What we’ve figured out is that we can stay for a day in Tokyo when we land, do a day trip to Mount Fuji and the next day leave for Kyoto. We planned on giving 3 days to Kyoto/Osaka. Apart from that we wanted to return to Tokyo to spend a couple of days there before we fly out on the 26th (10am). So basically –

Day 1 – Land in Tokyo, check in, explore some of the city
Day 2 – Mount Fuji
Day 3,4,5 – Kyoto and Osaka
Day 7,8 – ???
Day 9,10,11 – Tokyo
Day 12 – depart from Tokyo at 10am

As you can see we don’t really have anything solidified so I would really appreciate some suggestions around the following –

Any itinerary suggestions for Day 7,8

Must visit places in Tokyo, Kyoto and Osaka. We’re both fond of nature, history, tech and wildlife so any suggestions around these would be lovely. Would love to see some offbeat places as well and would like to explore the nightlife

Food suggestions for these places – we would like some vegetarian options as we both don’t eat seafood. We are also fine with chicken. We aren’t looking to go to very fancy places and for now we’re just looking at 7/11’s for food

Any must haves for a tourist coming for 10 days. I’ve seen that if we can get a suica card then it makes life easier. I also know that that I should carry a lot of cash and a coin purse. We were thinking of getting a JR pass maybe for travel? We’ll also learn a few Japanese phrases! Any other pro tips are welcome!!

I know it’s a lot to ask for but if you folks can give suggestions about any of these points then please do. And just anything in general that you loved or you think is essential while travelling to Japan.
