So here is the sushi bar I’ve been a part of for 10 years.(11 in October) the evolution is beyond amazing, and I’m proud to have a hand in nurturing it. I’ve worked more kitchens than I can count, this place feels like home.

Where’s your spot at? I’ve been out of doing sushi for about four years now and this post is the only thing in that time that made me smile about it again. Looks like a fun crew and atmosphere to work.

Nice! I want a dry ager so bad. I see you’re doing both hiramasa and kanpachi in there. How do they compare for dry aging?
I wished I work somewhere like that, ive been doing sushi 5 years and bounce around from once shitty place to another, somehow I’m always the most experienced person 😔
You go through that much kanpachi?!?!?! It’s a harder sell where I work. But blue fin, Hirame and all the salmons fly out the door
