What other fish are commonly used in Japanese breakfasts besides Salmon and Mackerel?


I recently went to Little Tokyo in Los Angeles and ordered the Japanese Breakfast at a Japanese/French restaurant named Azay and absolutely loved it! Went back a second day and ordered the same thing.

My wife and I want to try making something similar on a regular basis.

This restaurant served it with Mackerel and most guides online use Salmon.

I don’t want to burn myself out, so I’m curious if there are other proteins (fish preferable) that are commonly used in a Japanese breakfast like this.

Or is there not a huge variety and do people just not got tired of this because it’s so good? Haha

  1. Most any of the dried (japanese or korean) fishes can be used. Tai (sea bream) is also good as is yellow Cortina (Korean).
