  1. The sushi itself looks amazing. Maybe buy a boat to put it on to help with the presentation? Maybe a nice center piece?

    Honestly the presentation is really good as is.

  2. You know when you share appetizers with other people and you try really hard to not look like you’re being greedy by eating too large of a portion?

    This is the final boss of that, because I’d be tweaking trying to not eat the whole thing myself.

  3. Personally, I like variety. I’d add something cool like a cured, torched nigiri with a brush of soy or ponzu. Maybe a few temaki as well. Looks insane though

  4. Looks amazing. How long did this take you? What fish did you use and how do you source? And how long have you been rolling?

  5. if you want to make it easier on yourself, since you seem to have several the same kind of sauces, just serve them on the side and let people sauce their own. so I do love the variety.

  6. I’d just add nigiri, sashimi and a side of seaweed paper to that. Not everyone eats rolls. I’d add sake too

  7. The best way to refine this is to befriend and invite me to your next one so I can get a close up look and really consider the room for improvement

  8. There’s only one way to refine a platter that nice.

    You give the entire spread to me all except one and put it in the middle.

  9. Sauce can be tighter with a smaller nozzle. You can use diff colors of toppings besides salmon and seaweed salad. Beside jalapeños, u can use other garnishes/toppings like lemon, scallions, etc. anyway, good job! Looks delicious.

  11. It already looks amazing.I’m assuming by refine you mean visually so that it doesn’t look like you just placed rolls wherever convenient/like you were just filling the gaps.

    You can try staggering some rolls in a staircase pattern to produce curves. The ones without toppings, you can lay them like fallen “dominoes” (this will also help you hide end pieces) rather than just two rows of face up rolls. Create some distinct a unifying shapes/parallel lines to lead the eyes. If you have any nice condiment vessels for soy sauce you can place them in between to help break monotony or as objects to form lines around. Or you could break some lines by forming neat mounds of gari (instead of in a bowl on the side). Get some shiso leaves to use as separators so rolls could be placed closer to each other where you need them to without actually touching. If budget/ingredients allow, have some sashimi/tataki tiled in between. Have a perimeter of maybe 1-2 inch margin of jsut clean space to make it look tidier. Above all, have fun with it. You could like to charcuterie boards for some inspiration as well.

    try googling it to see if it gives u any ideas

    also, different sushi like hand rolls might provide contrast

  14. beautiful work! now take an overhead shot of the design. zoom out. if you used the very same items but created some curves with the rows and literally designed the zoomed out image to read as a strong, simple graphic … the result would be stunning.

  15. Looks great and delicious if I was invited to this party I wouldn’t be complaining.

    That being said, my personal taste is less sauce. I’ll often order rolls with the sauce on the side.

    I also think the seaweed salad looks messy as a sushi topper, I’ve never had it before in a roll, and it is delicious but I think I’d probably prefer it separate.

    I don’t think the cilantro is doing anything for you. And if it is legitimately in many of the rolls and not just a garnish, I would also leave it out. Love cilantro, but maybe for one or two rolls.

    It looks like you used salmon and tempura shrimp, so adding another fish would enhance things. It looks like you used the sauces to add variety.

    People seem to really like “sunshine” rolls with lemon slices. Not my thing, but would be a cheap way to add variety.
