  1. I’ve been using farmed Atlantic and the more affordable Steelhead trout caught my eye. It turned out extremely well and made enough to make about 35 rolls for $20

    I don’t like the curing process you recommend, however. I find it alters the texture and taste in an unpleasant manner. I prefer uncured salmon for sushi.
