In my recent trip to Japan we went to Matsuyama Sushi in Tokyo which is a lovely little sushi restaurant. The food was absolutely incredible and I’d really like to know what this appetizer is called and how it is prepared. It had a kind of sweet and savory taste to it. Thanks guys!

I mean it looks like an in house special that I am GUESSING is a piece of skin on salmon that was brushed with a sauce and then blow torched to make the skin crispy.
Can’t really name it, much less tell you what it was brushed with unless you tell us the place you got it.

I think it is salmon nitsuke(鮭の煮付け). Nitsuke is to simply cook fish in seasoned water. The typical seasoning is soy sauce, sugar and/or mirin, sake, water and ginger slices.
2-3 day marinated cod or salmon.
