I work in a pretty busy restaurant so I can’t exactly be bringing in loads of my at home study materials. I also like to avoid bringing in my phone out of fear that I’ll somehow fuck it up in one of the million ways to ruin a phone in a kitchen. Any suggestions for good ways to study when stuff isn’t busy? Any good stories of studying while on the clock?

I’d say do your anki or listening practice, but without your phone there isn’t much I can think of. I sometimes try to have imaginary conversations in a foreign language, but that could be just me. Still an option, though. と思います
Maybe you could try one of those flashcard rings? I’ve never used one but it seems like that might work.

You can obviously do a lot with a phone. Maybe there are ways to protect your phone. Or keep it somewhere save but still available. Or to get a second phone for cheap.
You could also print out or photocopy materials.
I just use my phone, as my work does not involve any hazardous environments.
Try narrating your day in Japanese to yourself! If you are waiting tables for example, thinking “I need to take water to table 5” -> テーブル5に水を持ってかなきゃ can help you reinforce vocab and such you learned earlier! If you find yourself really stuck on how to say something, when you have a moment of downtime you can look it up. Good luck!
maybe a cheap tablet, then you have a ton of options. i bring a bluetooth keyboard and do my reviews in the breakroom on my phone lol
