Is this bad?

I bought a ham Maki tray from this amazing Korean grocery store and I didn’t check the rest of the trays before grabbing this one. Is it expired or is that how it’s supposed to look? I don’t eat fish or sushi often

  1. Fish is old unless it was marinated in soy sauce which I don’t think so would have returned every thing

  2. Clown me guys, I threw the whole tray away and it wasn’t even fish. I should’ve waited for more answers as I got impatient and thought one answer was enough🤦‍♂️

  3. Hi, sushi chef here.

That’s 100% not sushi. That’s called gimbap, which you would expect to see in a Korean grocery store as opposed to sushi. I can’t tell you exactly everything that’s on there, from what i see imitation crab meat, carrots, yellow pickeled raddish, spinach? and what you think is bad fish is likely your ham. It looks fine to eat, did it not come with a label on the top saying what’s in it or when it was made?

  4. I don’t know if this has gone bad, but the brown thing is definitely raw fish, not ham. I can see where the tiny fish bones were. The color of tuna changes easily and each kind of tuna and each part of tuna has different color. It’s hard to tell by the picture. This is kimpab not sushi but as long as they use raw or marinated fish, I would only buy it if the store is really dependable and good at handling raw fish. I frequent three supermarkets in my neighborhood in Japan (I’m Japanese) but buy sushi from only one of them.

  5. Hi OP, I second the opinion that the brown thing is kanpyo. I think they must have used it instead of burdock as it is easier to find pre-packaged kanpyo and they taste similar enough (although kanpyo is a lot more chewy).

In general, unless stated gimbab should not include raw fish as they are rolled with hot rice and it will cook the fish and go off quickly. Gimbabs are meant to be eaten within a few hours of rolling too. They can go sour within half a day.

I’ve rolled many gimbabs in my life and had some upset stomachs from sour gimbabs! I heard there’s some frozen ones that’s going viral on tiktok maybe you can get your hands on them?

Hope your next experience is positive 🙂
