Just moved and I drew up a custom nameplate for me and my partner to put on our mailbox.
I want to print this off as a sticker but the sites im finding online are weirdly complex or require a minimum order of 100 copies etc.
I litterally just want to print off this one sticker I made. Is there any place to do this easily?

You can print it in Lawson using their copy/printer machine. It has the option to print on sticker paper.
Do you have a printer? Every 100-yen shop (DAISO, Seria, etc) sells a pack of sticker paper that you can print your image/label on, like the photo below (look up ラベル用紙 or シール用紙).

This is because the first item takes a lot of work and setup time. The second item is basically cost of setup. This is the way any business card, sign or repeatable object’s cost is setup. Minimum order of 100 means you are paying for the first one and the next 99 are free.
