  1. The black flecks are blood. This can happen if the fish is injured before or while being caught, and also if the fish isn’t properly bled out after harvest.

  2. The fish likely sustained trauma before being harvested, it’s harmless but may taste a bit more of iron.

  3. This is fiber, if your tuna would be dry aged it would melt otherwise it is chewy
    I tend not to serve these pieces

  4. Nice belly burn on that salmon in the back. Looks like the fish sat in the sun for 12 hours before it got processed.

  5. That specifically isn’t bad and is edible, but honestly that fish including the salmon definitely doesn’t look the freshest
