I was granted a CoE for studying in Japan but the program was cancelled and I left to my home country, therefore making my visa void. However I still have the CoE and it has not expired yet. Is there some usage for it like applying for a student visa again and doing something?

The CoE is essentially dead. You will need a new one if you apply for another student visa.
To confirm, your CoE was already used to apply for a visa, and you already received that visa? If that’s the case, then you have already used that CoE. They’re a one-time use thing.
