That may be my favorite bowl in all of Japan. And I’ve never seen that yakifu (I think that’s what it’s called at least) as a topping anywhere outside of Hakodate.
Is that a seafood or chicken broth base? At risk of getting downvoted, I’ll say that I would take either one of them over the prevalent tonkotsu pork bone broth.
