Was the oil at the right temperature? Take a wooden chopstick and place it into the oil, if you see small bubbles you’re good to go. If not, wait. Use oils with high smoke point like peanut or vegetable, so you won’t get that burnt flavor.
You might want to try thinner pieces of pork. It might be taking too long for the inside to cook to proper temperature so the outside ends up burnt. Are you deep frying or shallow frying?
I saw some tonkatsu restaurants on YouTube where if the cut is thick, they actually boil the meat a little first to cook it partially so that when they fry it, it doesn’t take that too long to finish cooking.
Agreed that it could be any number of things including if your pork is too thick it could require too long cooking in the oil so make sure to pound it thin, and make sure your heat is the correct temperature. Also if you have ANY burned bits sitting in the oil it will make all your oil and whatever you are frying in the oil taste burned so make sure to remove anything visible burned black.
For sauce I love tonkatsu sauce for tonkatsu, what’s stopping you from trying it? It’s the tried and true sauce?
