Best online fresh sushi for the below list

I would like to order 2lbs Hamachi, Otoro and Chutoro 2 lbs, Scallops 1.5 lbs, Sweet Shrimp 1/2 lbs, Salmon 2 lbs, Uni- Sea Urchin) and others. Somehow, I cannot find a place that has all of them at the same time. Anyone evr saw sweet shrimps?

  1. Any reason why you specifically want to order online? Depending on where you live, local markets should have all those things fresher and cheaper.

    From what I understand, a lot of the online markets you listed also manage or work with commercial fishing fleets to source their seafood, so a lot of their options are based on region. With licensing, permitting, importing, and processing issues, they may find it difficult to get a wider variety of ingredients.

    Keeping shellfish fresh and alive is very difficult. If they were to hold the shellfish at 32-40F, they only have a few days to sell it before it goes bad. The next option is to freeze it but that introduces other quality problems. To make selling shellfish profitable they have to sell a lot in a short time frame. Because of all the operating costs involved, fresh shellfish costs more and restaurants aren’t willing to pay more for that, and their customers aren’t willing to pay the addional premium either.

    A vast majority of sushi restaurants use frozen sweet shrimp. Check out your local asian grocery store, they should have them.
