So I’m currently in the process of switching jobs at the moment and I was lucky enough to find two offers given to me starting soon. I am currently on an Instructor’s Visa, but the two job offers I mentioned require a Specialist in Humanities Visa. I already started the process for a visa change request with one company on my behalf since at the time, I didn’t know if I would get another offer later on. However, I was able to get the offer and they want to move forward, but they would also have to send a visa change request on my behalf for their company as well. Is it possible to have two visa change requests from two different companies processing in immigration? The reason is that I want to spread my options and take the offer that will allow me to start work first. Plus, I want to lower the likelihood of issues happening in the visa change process in case there’s one that will get rejected.

No. Generally speaking you would either
a) Inform immigration of the change in sponsoring company
or
b) Await for approval and then inform immigration of a change to your organization (however this may attract some scrutiny as it would look slightly odd.)
They best thing to do would be to contact immigration and ask them what you should do.
But that said I would choose the company that offers you the better position, not the one that lets you start soonest.
