Every sushi place I went to in Mexico City was outstanding. These were usually higher end places (but still way cheaper than similar places would be in the US). I find most places that focus on quantity over quality are trash no matter where you are.

Because it’s Mexico, Itamae (Sushi Chefs) don’t particularly flock to Mexico to make a living.
I guess it depends what part of Mexico you are at. The town I am from does not have great sushi. Most places that pop up are closer to fast food joints where they serve low quality sushi, and the “higher end” places are really just marginally better. But, if you go to the big city near by, you can find really good sushi places. In my town there are no sushi chef’s just ordinary cooks making sushi. I believe the good sushi chef’s with Japanese food background head to the bigger cities.
how specifically is it terrible? I lived in a coastal area of the Middle East for years and sushi was terrible there, too. It wasn’t a freshness issue–fresh fish existed and tasted good at other restaurants. I don’t know if it was the taste/texture/quality of the rice, or if no restaurant could get sauces right, or if the cuts of fish weren’t right… or all of the above. It was just *off*

I would like to see some Mexican street food sushi. Like roasted grasshoppers with peppers or like a mangonada roll. No need for fish on top, I just think it would be an interesting take

Because like most western sushi it’s not really sushi but something completely different. Mostly salmon, tempura, avocado, and either a mayo-based sauce or something sweet and syrupy.
