First time making udon! What is the best way to store the uncooked noodles and how long can I store them for?

  1. Airtight container – fridge if you’re going to eat the next day and freezer for anything longer – ideally you would have extra dough rather than noodles – should be good for a month.

  2. How thick are you noodles? I made some by hand last week, but I was thinking of pulling out my kitchenaid pasta roller and giving that a try, but the largest thickness possible is 1.8mm, and I wasn’t sure if that was too thin.
