Those of you who have created one, how do you go about it?
I’ve been told I need to use a lawyer from back home (Australia) because as a foreigner, Japanese law regarding wills does not apply to me, but I have also been told I can do it here, not sure which is correct.
FWIW, The embassy says they can witness legal documents, but not create them. Fair enough, they aren’t lawyers, so no surprise.
FWIW2, apparently there is an agreement where some countries honour wills from other countries, and Japan and Australia are both signatories. But the laws regarding wills are not standard.

My Japanese wife and I (UK) have appointments to make wills here: https://www.kosyonin.jp/fuchu/ next month. Cheaper than lawyers, with set prices. We will use the Japanese wills for Japanese assets while our UK wills deal with UK assets.
