  2. Honestly, I really like the way the sauce swooshes back and forth over the pieces laid against each other. Keep it up! Don’t let anything discourage you. Edit to add that spicy mayo is delicious and anyone that says otherwise might just be a snob.

  4. ignore the spicy may nay-sayers. i like spicy mayo on my rolls sometimes too, and i tend to prefer fresh sushi over anything.

    when cutting your roll, to make it a more clean cut, make sure that the knife is sharp and you wet the blade on the part that is at least used when slicing the roll. it’ll go through much cleaner and you wont have to worry about “sawing” it.
