  1. So yeah that movement does worrry me a little. You’re basically dumping a bunch of salt into the fish muscles which causes it them to activate and seize up. This feels like it could have the same effect as rigor mortis, and it’ll end up as tense and tougher chew. Tbh I don’t know if avoiding rigor mortis is as important in fish as with land meat. I know in tuna fishing circles, there are apocryphal stories where poorly caught tuna will exert so much energy it will start to “cook” itself live with its own muscles. Tbf, I don’t know how true that is either. Just some food for thought
