Fish still makes the best sushi. Raw land animals are pretty mediocre. They just don’t have that natural flavor and need some heat to bring out the complexity.

I’ve had it where it was tasteless and squishy (Osaka and Awajishima), but I’ve also had it amazing with a raw egg cracked in it in Fukuoka, Japan.
I’ve had horse meat, but never on sushi… definitely have to try some someday

I’ve had horse tartare with other stuff that made it fresher and wetter
However having tried it I must say that I can definitely see why you liked it
Instead of spring onion it would be really interesting to see it paired with a mango or apricot based sauce
Basashi (raw horse) is so underrated because people can’t get over the arbitrary stigma surrounding certain animals. It’s ok to like things that are objectively delicious. Just remember that the horse in Japan is raised for slaughter, so it’s far more tender and flavorful than horses that are ridden or worked often.

I just went to Japan and tried horse sashimi and it was wonderful! Also had whale, wouldn’t recommend. The taste/thick rubbery texture made me want to throw up.

A lot of people forget that different cultures and countries eat meat differently I wouldn’t mind trying a horse but it’s against for me to eat Guinea pig since I owned some as pets too much but I do love raw beef I’ve had tartare, Yuk-hoe, and even made some beef with lemon juice and onions into a type of fish called Keluguen

Its weird that people pick and choose what animals are okay to eat … and im not talking about like dark meat, fish meat, i mean just … i love horses. But what makes cows more worth eating than them? Cows are adorable and sweet?? And pigs are hella intelligent?

In Russia, they breed a horse just for eating. I’ve had that before in sausage form, never rawl like this.
