I believe top piece is Madai (Japanese sea bream/snapper), 2nd white piece.. I’m not all too sure but I think it’s Hamachi (yellowtail), third piece is hard to tell.. I can tell by texture) It could either be Escolar or Ika (if it’s chewy, then it’s ika; if it’s soft and buttery, then Escolar) and last bottom right is Hotate aka Scallop! 🙂
Escolar – for some lucky % of the population = instant diarrhea. They sell it as “white tuna” or few other fake names. Not tuna. Not even close.
It’s near impossible to tell white fish from locs but I would say from top to bottom:
* Hirame
* Hamachi
* Medai? Kanpachi? If it was plain white and buttery it could also be escolar
* Hotate (only one I’m sure)
Albino Salmon
Tilapia labeled as white tuna usually
You should put ponzu on all of them
