I don’t quite like Japanese sausage, I’ve been looking for german beef sausage on store and konbini such as sevel, fami, lawson, belx, seijo ishi, kaldi.
anyone know where could I find them around tokyo would be much appreciated

There are also some shops in the food markets under Futago-Tamagawa or Shibuya station
At international grocery stores (Nissin, National, Kaldi, and to some extent Seijo Ishii). But for German sausages, find a German deli, like Lecker Bissen.
I heard ケーニッヒ has great German sausages.

A google search reveals [インゴ ビンゴ](https://maps.app.goo.gl/zkmAPEhWBzsWHsNJ6?g_st=ic)　(Ingo Bingo) near Odakyu Kyodo Station. The owner apparently trained under a sausage master in Germany and makes the sausages himself every day. I’ve never been but perhaps this is right up your alley.
There are a lot of shops around okubo and shin okubo stations that sell foreign foodstuff and spices
