Boil cut vegetables of choice in a pot of salted water until slightly tender. My mix is usually potatoes chunked, carrots, broccoli, zucchini, celery, and bell peppers. Remove veggies to a bowl and drain off the water. Warm a can of coconut milk in the pot, stir in 2 or 3 sections of the curry paste, and some diced roasted chicken. I usually use the pre-roasted chicken from Costco, Sam’s, or wherever. Add back in your veggies, some chicken stock or water if a thinner consistency is desired, and serve on a bed of rice or noodles. Yum.
