Went to Nijiya right when they opened and got this sashimi! I know we’ve got tuna and salmon, but what is the one on the right? It has a very fishy flavor.
Tuna salmon and yellowtail (maguro, sake, and hamachi) but the yellowtail still has the bloodline on it. I’ve seen thousands of sushi chefs serve it like this but it has a much better flavor without it attached. As an executive sushi chef for ten years I never allowed it to be served with the bloodline still on.

I love me some Hamachi, but damn, trim that bloodline. I was a sushi chef for 5 years and would never serve Hamachi like that.
Hamachi. The redder flesh tends to be a little more fishy.
Oh Lord whatever it is it the whole plate looks amazing and wouldn’t last long around me. Now you got me craving fresh sashimi
