What type of sashimi did I get?

9. Tuna salmon and yellowtail (maguro, sake, and hamachi) but the yellowtail still has the bloodline on it. I’ve seen thousands of sushi chefs serve it like this but it has a much better flavor without it attached. As an executive sushi chef for ten years I never allowed it to be served with the bloodline still on.

11. I love me some Hamachi, but damn, trim that bloodline. I was a sushi chef for 5 years and would never serve Hamachi like that.

12. Hamachi. The redder flesh tends to be a little more fishy.
