I’ve made rolls a few times, but this was my first time trying nigiri. I found it way easier! From left to right: torched Verlasso salmon with kewpie, Verlasso salmon with ponzu marinated scallion, ponzu butter poached shrimp with sesame seeds and fried garlic , smoked pork belly with siracha, and smoked pork belly with kimchi cucumber. It turned out so good!

I got fat sausage fingers so making nigiri by hand is a horrible experience. I ended up just buying a 10 piece mold
