Me and my other two friends are visiting japan for the first time and I’m open for suggestions/recommendations for this itinerary for a lot of places. We aren’t really big on shrines (well we haven’t been to one but assume we wouldn’t be). Should we add 1 or 2 days?

If the go karting you mention is the one on the streets, I’d suggest avoiding that. It’s widely hated here and they’re loud, disruptive, and dangerous.
It looks as if you’re mostly going to amusement parks. Do you really need to travel to Japan for that? They’re invariably jammed.
If it’s the street carts u/briannalang mentions you’re contemplating, yeah, skip that. They’re reviled.
