I’ve seen people state that most accepted applicants will get their results this week or next week, but I’m the kind of person who hates submitting documents at the last minute. If we don’t get our placement and JET ID until the last week of May, is it likely that we can fill out our required forms and get them submitted by the 31st? I’ve already gotten my FBI Check done and my certificate of health had to be revised due to some scanning issues, but I should be able to get the insurance form filled out and submitted/accepted quickly once I get placement info right?

yes if they don’t give you your ID in time they’re not gonna expect you to have superpowers, they’ll accommodate you
In my email I recieved they said if the placement and our number ends up being late the deadline will be extended. Also from looking at the insurance form it should really take only a minute to fill out so I wouldn’t stress on it
Much of the same, but if it helps: my JET Desk instructed us to fill out the insurance form without the JET number, submit it, and refill it out + resubmit it once that JET number comes in.
Maybe this will help with your peace of mind? At the end of the day, best to do what your JET Desk / consulate have asked of you as they know when the deadline is and when the JET numbers will be assigned.
All the best!
At least in Australia, we fill out all but the parts we don’t know ( JET ID) and submit them.
Then the consulate adds the information for us when the placements are organised.
