We have tons of fuyu persimmons from our tree and I want to try making hoshigaki, which I’ve never done before. I know it’s traditionally dove with hachiva, but will fuyu work too? Also, I think I have to do it indoors or else squirrels and crows will eat them _all_ up (they eat half the fruit on the tree before I can even pick), and we have some very sunny windows in the kitchen. But if they’re inside, will the peeled, hanging persimmons just attract tons of flies? Lastly, with fuyu specifically, how ripe should they be before I peel and hang? Thanks so much!
