  2. I think it’s negitoro in the back, but what is the tuna with the orange in the front? What’s the orange? Everything, especially the toro looks great!

I remember staying in tokyo and the sushi was pretty much to US spec, a bit on the medium to smaller side, which I like (I think most people like it like this), but when I got to Osaka, oh my god, it was like a competition who could put the largest slices of fish on a piece of rice. They also like to deep fry everything…Japan is a wonderful place.
