Trying to work on my plating recently, some of the plates sent out from tonight

1. I would eat your sushi so hard.

2. Easy up on the sauce goo. Also, less is more. Many of the plates are cluttered.

5. Beautifully rolled and balance of ingredients! Maybe less of the flowers crowding some of the fuller plates. If they’re on every plate it’s a bit less special if that makes sense?

   Looks delicious tho! I want to dive in. Kudos.

6. I’m not a sushi guy, so I don’t have much good criticism, but that first one looks cut very thin. Why is that one so much thinner?

9. Looks amazing! My only “critique” is the sauce squirting should be finer, more delicate & intricate. Dont get me wrong though, id be thrilled if I sat down at a restaurant and these dishes came out!!

10. Looks good, the only thing is suggest is flip your end pieces over so they see the clean cut and not the butt end of the roll. Also feel like that’s a lot of wasabi you’re throwing down

11. If a sushi roll has masago on top, don’t plate the roll sideways (pic 4).
