Found in a salmon sashimi order (but was actually more like a salmon tartare, so it had other stuff in it, like mango and scallion and tobiko) from a kinda sorta decent-ish place in NYC. It was actually a perfect ring at first but I ripped it apart? Don’t know why to be honest… just spotting it freaked me out. So I took a timelapse of it… and… well it technically moves very… very slowly.
Currently losing my mind with fear that I ate half of this dish.

Could be finely cut/shredded bonito flakes. Bonito flakes move slowly like this. Need more info on the prepared dish to know for sure.

No. It’s just a piece of vegetable matter that’s changing shape as it dries out.
Try cutting a tiny sliver of scallion or something similar and take a sped up video like this and you’ll see much the same thing.
It’s just dried finely chopped daikon radish
i think it looks like shredded daikon.
