  1. I’ve had horse meat before, a few times actually, and it’s alarmingly sweet for my taste. I imagine this would be a better balance (vinegar and salt with the natural sweetness of the meat) but also I’m not in a rush to try it. Looks good though, OP.

  2. I tried raw neck, belly, and thigh, my recollection is the taste was like mild beef and it was a bit chewy. Purely from a taste/texture standpoint I didn’t think it was anything special.

    Also it was very pricey for a small amount.

    Hopefully yours was a bit better.

  3. Man, I consider myself a sushi pro with having been to Japan and eaten at many great places, but this is definitely a higher level.

    I’d try it just to say I ate it, but I would feel pretty bad about it
