That’s just a poorly trimmed peice of fish, ive be embarrassedto sell that if its at a reasturant. I would eat around it myself, but its not any kind of parasite or anything, seeing as that’s what you’re worried about. 5+ years making sushi, I know what to look for but ive never seen a parasite in any of the fish I’ve worked with. And I have an eye for detail.
It’s bloodline, it’s fine. Just looks bad and is livery tasting.
