Japanese Recipes You Recommend

Before coming to Japan I only felt confident making American comfort foods (Mac and cheese, fried chicken, mashed potatoes, etc) but after Japan my whole culinary world opened and now I make gyudon, oyakodon, karaage, kabocha, and tons of onigiri and tamagoyaki. What are some Japanese recipes that you’ve learned, or love, because you’ve lived in Japan? Would love new ideas to try!
