  1. I think it’s usually better to wash uni with saltwater rather than freshwater if possible. Some seafood can suffer from osmotic stress when using freshwater which can damage the cells and change the texture.

  4. You should try cutting the “soft” part all around with a scissor so the meat stays in very neatly and it’s easy to clean and harvest, that’s how we do in Italy

    The tongues look so good and thicc, the color was perfect, but it hurt my soul to see them rinsed in regular water.

  7. Watching this makes me cringe, after opening the urchin you should be putting the uni gonads in a salt brine bath not fresh water. You place the uni in the salt brine and clean them in there, the transfer to a floating grid with paper towel.
